Chocolate Flourless Cake

This is such a fantastic recipe and every time I make it so many people talk about it. They even remember it months later. So it must be a winner. And the best part about it is that with so many not able to have wheat it is getting difficult to know what to cook - well this is good for both! I got it from a Sue Shepherd cookbook - Two Irresistible for the Irritable. It is such a brilliant book.




So the Ingredients are -
1/3 cup cocoa powder
1/3 cup water
150g unsalted butter
150g dark cooking chocolate
1 1/4 cups brown sugar, firmly packed
1 1/4 cups almond meal
4 eggs, separated


Preheat the oven to 150C. Grease and line a 22cm round spring-form cake pan.
In a saucepan over low heat, combine cocoa, water, butter and chocolate until melted and smooth in consistency. Remove from heat stir in sugar, almond meal and egg yolks.
Transfer to a large bowl and leave to cool to room temperature.



Beat egg whites in a small bowl with electric mixer until soft peaks form.


Fold egg whites into chocolate mixture in two batches.



Pour mixture into prepared cake pan.



Bake, uncovered for 55-65 minutes. Remove from oven. Allow cake to cool in pan for about 20 minutes before removing to wire rack to cool completely.

I like to leave mine at least for one day in the fridge as it can be a little "gooey" if you eat it the same day. Some love it like this, but I prefer a more cakey texture.

If you wanted to you could serve with Ganace and strawberries!! Delicious!

We’re going to be eating this on Sunday for family get together. Yum!

I also make these sweet things today too. Not for me though some work happening at the Kingdom hall and I thought I would give the men some real men food. Lol

  1. Thanks for the chocolate cake recipe ........I always look at recipes like that but never end up making them because of the choc and the butter but maybe one day for something really special I will do it.
